Variegated Cassava also known as variegated tapioca has bold variegated foliage starts reddish – pink then as it matures they turn into exotic gold, cream & green variegated leaves with pink branches coming off the trunk.
Variegated Cassava can be grown year round in the tropics and subtropics or as an annual in cooler regions as the roots will send up new shoots in the spring.
The leaves and roots are edible but must be cooked correctly as they are toxic raw. Cassava must cooked before it is eaten as it contains cyanide. Leaves are to be Cooked for 10 mins and roots 20 mins.
