The Pacific Plantain can be eaten cooked when green or fresh when fully ripe. Plantain rank as one of the most important staple food in the world. When ripe they contain more starch and less sugar their banana cousins. Plantains can be fried, baked or grilled when ripe until they caramelise. Green plantains must be cooked prior to eating and can be used as a potato substitute.
